Distilling at Lindores Abbey began centuries ago – with the earliest written reference in Scotland to Scotch Whisky (or Aqua Vitae) appearing in the Exchequer Roll in 1494. It records a Brother John Cor, a Lindores monk, who was commissioned by King James IV to turn 8 bolls of malt into Aqua Vitae. 8 Bolls of malt amounts to around 500kg in modern terms and would have been enough to make about 400 bottles of todays whisky.
The first release in lowland distillery Lindores Abbey’s Friar John Cor Congregation series a collection of whiskies celebrating the official recognition of Lindores Abbey as the site of the first recorded distillation of Scotch whisky in 1494. Chapter 1 is a cask strength whisky that was matured in a combination of bourbon, Monbazillac, shaved-toasted-and-recharred and sherry casks, creating a complex, sweet character that compliments Lindores classic style. Aromas of ripe banana, honeycomb, apricot, red apple, peaches and freshly-baked pastries fill the nose, complimented by notes of dates, apricots, cinnamon, figs, prunes, blood oranges, almonds and honey throughout the palate and lingering in the finish.
